Well I knew it! Astronomical winter is not over. A prediction of 1-3” of snow on Saturday turned into 6”+.

Our little crocuses are a little cold, but they will bounce back when it warms up.

It wouldn’t have been so bad on Saturday, except we were in Iowa City for the Special Olympics Spring Classic. It was white-knuckle driving on the way home. But, thanks to a great Special Olympics Dad, we got home safely.

As for the competition, Matthew’s team, Link Magic, won one game and lost one. They did a great job and brought home silver medals.

As for time in the kitchen…
Monday in the Kitchen with Matthew: I’ve only had Borscht, a soup of Eastern Europe origin, one time. So when we ran across this easy crockpot recipe, we decided to give it a try….garnished with sour cream and parsley. (I forgot that when cutting up beets it looks like a crime scene, Lol)

Tuesday in the Kitchen with Matthew: Oven Roasted Chicken and vegetables.

Thursday (Friday) Pieday: A favorite Italian street food, Sfincione Siciliano is a thick, soft rectangular crust layered with a sauce of sautéed onions & anchovies, diced tomatoes and cacciocavallo cheese then topped with a mixture of breadcrumbs, pecorino-Romano, oregano and olive oil.

Although I’ve never been there, Sunday’s pizza sounded good, a ‘Cherry Jones‘ copycat from Paulie Gee’s Pizza Greenpoint, Brooklyn, NY. .
Sunday’s Creation: A Sweet & Salty Pizza…pan crust brushed with olive oil then topped with Gorgonzola, Dried bing cherries, prosciutto, fresh mozzarella and a drizzle of orange blossom honey.
