Peggy's Pizza: Part 16 of 2023

Finally! I have been waiting anxiously for our night time temperatures to consistently get above 50 degrees. So on Thursday we went to Goode Greenhouse to get our hanging baskets for the front porch.

I had to restrain myself from buying plants for the garden as it is still a little risky.

We did finish a project on our hill. Two years ago we replaced our deck. Much to my husband’s chagrin (and the deck guy), I insisted we save the old deck railings. We took two of the rail sections and attached them with piano hinges. They should be perfect for trailing up the honeysuckle planted underneath.

And my lilacs are in full bloom…

I am getting close to finishing up my hubby’s family genealogy notebooks to share at the family reunion. So I found more time to be in the kitchen this week.

Tuesday in the Kitchen with Matthew: We made a meatball casserole and served a side salad for lunch.

Wednesday in the Kitchen with Matthew: We had leftover potatoes, carrots & cabbage…so, we made BUBBLE & SQUEAK (Traditional British Fried Leftovers) served with bacon and eggs.

Friday Pieday: Happy Cinco de Mayo! Mexican Pizza…our pan crust stretched thin topped with refried beans + salsa, parmesan, shredded Mexican cheese, taco meat, jalapeños, black olives and Oaxaca cheese then garnished with sour cream, green onions, diced tomatoes and more Mexican cheese. And of course, served with a margarita.

Sundays Creation: Pizza alla Bismarck…a traditional Italian pizza topped with a garlic & onion tomato sauce, mozzarella, prosciutto, a sunny-side-up egg and fresh cracked pepper. (History: In 1862, the Prussian Prime Minister Otto Von Bismarck gave a speech in Italy where he said it would take "blood and iron" to effect change. The phrase was mistranslated as "blood and eggs", and Otto got a pizza named after him.)
